The Petty knife, also known as the Japanese utility knife, is smaller than a Gyuto but larger than a paring knife. This intermediate size makes it a versatile all-purpose knife, ideal for a variety of small kitchen tasks for which a larger knife would have been unwieldy. Its pointed tip gives it great precision, while its length makes it great for slicing fruits and vegetables, making garnishes or chopping herbs.
In Japan, it is also referred to as a "Shotoh".
